The story behind The Butcher's Hook
GUS EVANS, OWNER

Originally from New Zealand, Gus' early career included stints running Deals in Chelsea Harbour and the Big Easy on the King's Road in the early 1990s, before becoming operations director at Adam and Kate Robinson's group of restaurants - The Bollo gastropub in Acton, The Chiswick restaurant and The Salt House in St John's Wood. In 2003 he was appointed restaurant development manager at the Hoxton Apprentice, the government-sponsored training restaurant, and in 2005 he went on to set up The Butcher's Hook.

JACKY LELIEVRE, HEAD CHEF

Jacky hails from Brittany, and, as the son of a butcher, developed a keen interest food at a young age. After leaving catering college, Jacky trained in England with Kevin Cape at the Bell Inn Hotel in Buckinghamshire and at the Townhouse Hotel in the Lake District, where continued to build on his classical French cooking skills. Back in France, Jacky then worked in several Michelin-starred restaurants, including Moulin de l'Abbaye in Brantome in the Dordogne, Restaurant 'Le Saint James' in Bordeaux, and Les Fermes de Marie in Megeve in the Alps. Next stop was Galway on the west coast of Ireland, where he opened Nimmo's Wine Bar & Restaurant with Harriet Leander, an artist and restaurateur. Returning to England, Jacky took up the post of Head Chef at the Anglesea Arms in Hammersmith, one of London's most celebrated and successful gastropubs – a position he held for four years. Jacky joined Gus when The Butcher's Hook was launched.

Since then, Jacky has spent a fortnight as a guest chef at La Tupina, one of Bordeaux's finest restaurants and a true example of the rustic French cooking that Jacky brings to The Butcher's Hook. When not in the restaurant kitchen, Jacky be spotted doing regular demonstrations at the Slow Food Festivals on London's South Bank, showcasing his skills using the fantastic produce available at the events. He has also acted as a judge at local youth project cooking competitions organized by Hammersmith & Fulham Council.
